Banana Bread

Ingredients

  • 120g Blue Band Margarine
  • 150g Sugar
  • 2 eggs, beaten
  • 250ml banana pulp (4 ripe bananas mashed)
  • 15ml lemon juice
  • 240g cake flour (500ml)
  • 2ml salt
  • 5ml Bicarbonate of soda
  • 30ml milk

Method

  1.  Preheat oven to 180 degrees Celsius
  2.  Cream the margarine and sugar and beat in the eggs one at a time
  3.  Add the banana pulp and lemon juice
  4.  Sift the dry ingredients together and stir into the creamed mixture alternating with the milk
  5.  Turn the batter into a lined and greased loaf tin and bake in a moderate oven at 180 degrees Celsius for 1 hour, or until cooked through
  6. Serve warm with margarine
